Attempting to Make Freezer Meals

Since we bought a freezer a few weeks ago I've been wanting to make some freezer meals.
My sister-in-law Michelle and I decided to make a bunch of freezer meals together.
We each came up with 4 meals and were in charge of getting all the ingredients for each of those 4 meals to be made for each of our families.
Yeah, that's a lot of food and it was a lot of work but will hopefully will be worth it.


1. Breakfast Burritos

Ingredients:

2 lbs. bacon, diced
2 lbs. breakfast sausage
1 large onion, diced small
1 cup diced bell pepper
20 eggs
36 fajita sized flour tortillas
1 (8 oz.) bag shredded cheddar cheese

* I added hash browns this time.

Directions:


Chop vegetables and saute. Cook sausage and bacon. Cook hash browns and Eggs. Combine all ingredients in a bowl. Place serving size in tortilla and sprinkle on cheese. Wrap individual burritos in plastic wrap. When ready to eat warm in microwave (with plastic wrap) for about 5 minutes.
 

2. Black Bean Taco Soup

Ingredients: 
1 lb lean ground beef (or ground turkey works too!)
1 medium onion, chopped
1 package mild taco seasoning mix
1 (16 oz) bag frozen corn
1 (16 oz) can black beans drained and rinsed (you could use kidney beans or pinto beans)
2 (14 oz) cans stewed tomatoes
1 (8 oz) can tomato sauce
1 (4 oz) can diced green chilis
Directions:

Brown meat and onion, drain. Let meat cool for a minute, then dump into a resealable gallon-sized freezer bag.
Dump the remaining ingredients into the bag, mix together, and zip bag closed.
When ready to eat, remove from freezer and thaw in fridge for 24 hours. Cook on HIGH for 1-2 hours or LOW for 2-3 1/2 hours.
Serve with tortilla chips, cheese, sour cream, and guacamole.

Ingredients:
1 pound beef stew cubes
4 carrots, sliced
4 red potatoes, cut into large cubes
1 package dry onion soup mix
2 cans 98% fat-free cream of mushroom soup
1 (8 oz) can tomato sauce
1 (10 oz) package frozen green peas

Directions:

Place all ingredients in a resealable gallon-sized freezer bag. Mix together and zip bag closed. When ready to eat, remove from freezer and thaw in fridge for 24 hours. Cook on LOW for 7-10 hours (or HIGH for 5-6 hours).


Ingredients: 
1 ½ pounds chicken breasts
1 (16 oz) bag frozen broccoli florets
2 (16 oz) jars Alfredo sauce 
1 large green pepper, chopped
1 (4 oz) can sliced mushrooms, drained (we didn't use these)

Directions: 
Place all ingredients in a resealable gallon-sized freezer bag and mix together.
When ready to eat, remove from freezer and thaw in fridge for 24 hours. Cook on LOW for 4-6 hours. 
Serve with cooked fettuccine noodles and green salad.

(This makes two meals) 

Ingredients:
5lbs Yukon Gold potatoes, diced (peels still on)
1.25 cups onion, diced
10 teaspoons garlic, minced
8 cups chicken broth
16 oz cream cheese, softened
1 Tablespoons Lawry’s Seasoned Salt
cheese (optional)
bacon, cooked & crumbled  (optional)

Directions:
Divide and place all ingredients except cream cheese (and cheese/bacon) into gallon size freezer bags, seal and freeze. To serve: Thaw. Place in slow cooker for 6 hours on high. Stir in the cream cheese and allow to melt. Stir every 10-15 minutes until soup is well blended. It takes an additional 30 minutes to 1 hour. Garnish with cheese and bacon.


Ingredients: 
1 lb chicken breasts
1 (26 oz) jar of chunky vegetable-style spaghetti sauce
1 zucchini, chopped
1 green pepper, chopped
1 sweet onion, chopped
Directions: 
Place all ingredients in a resealable gallon-sized freezer bag and mix together.
Garnish: chopped black olives, shredded Parm cheese
When ready to eat, remove from freezer and thaw in fridge for 24 hours. Cook on LOW for 6-8 hours. 
Serve with cooked spaghetti noodles and garnish with olives and cheese. 

7.  Yummy Meatballs 

Ingredients:

15 frozen meatballs
1 can cream of chicken
1 can cream of mushroom
1-2 tsp. mustard
1-2 tsp. Worcestershire sauce

Directions:

Combine all ingredients and heat thoroughly. Serve over warm noodles or rice.

Ingredients:

Medium - Large bag of baby carrots (we just used whole carrots, cut up)
Red onion cut in large chunks
2 large cans of pineapple (undrained)
4 garlic cloves
4 chicken breasts
1 cup teriyaki sauce

Directions:
Split between 2 bags, seal, mix, lay flat and freeze. 

Directions for bag:

Add additional 1/4 cup sauce to crock pot. Cook on low 6-7 hours. Serve over rice.

Two Week Menu

 The past two weeks were CRAZY at our house and 
I made it ever crazy by not making a menu/ not making "real" dinners.

15th (Saturday) - {New Recipe} South West Roll Ups... Bonus, I'm gonna freeze some for later.

16th (Sunday) - Super Salad  (grilled chicken, boiled eggs, sunflower seeds, beets, tomatoes, etc)

17th (Monday ) - Breakfast Casserole

18th (Tuesday) - Hamburgers on the grill with frozen french fries

19th (Wednesday) - {New Recipe} Crockpot Ranch Pork Chops with Rice... Only has 3 ingredients.

20th (Thursday) - Lexi's pick... Homemade Macaroni and Cheese

21st (Friday) - {New Recipe} Breakfast Burritos... I'm also gonna freeze some of these for later!

22nd (Saturday) - Lazy Left Over Night

23rd (Sunday) - Super Nacho's (Taco meat, tomatoes, olives, etc)

24th (Monday) - Crockpot Italian Chicken and Rice

25th (Tuesday) - Lexi's pick... baked potatoes and grilled chicken

26th (Wednesday) - Lexi's pick... "A Wyoming Pizza"... since I don't know what that is...
                                   How about we try... {New Recipe} Homemade Pizza

27th (Thursday) - Lazy Left Over Night

28th (Friday) - Lexi's pick... Rice, Beans, Peas and Carrots ...I think I'll try to cook beans in the crockpot

Organizing My Recipe Collection

For those of you who use Pinterest, you know how it's so easy to pin a million recipes 
and then never try any of them because you are so overwhelmed by all the pins.
I've come up with a solution.
I will start by pinning a new recipe in my different boards (main dishes, breakfast, dessert, etc.).
This will make it easy for me to find new recipes to try.
Once I've tried a recipe, I will either delete it if I didn't like it or 
move it over to my new board, "Recipes I've Tried and Liked."
I will also print out the recipe and put it into a binder for easy reference when I'm in the kitchen.
But now when I'm planning my weekly menu,
I'll be able to look at the recipes that I know and like.
And now it will be easier for friends to know what recipes I like and would recommend.
I've added a button on the side of my blog that will take you directly to my Pinterest board.

Weekly Menu

I have a lot to blog about.
We love our new apartment.
We love being so close to family and friends.
I feel like we're on vacation because we have been busy having so much fun!
I'll post pictures soon.
...
In the mean time, here's our menu for the upcoming week.
I'm posting this more for me than anyone else.
But in case you're curious, here's what we're gonna be eating...

Tomorrow - Grilled BBQ chicken and salad (lettuce, tomato, boiled eggs, cheddar cheese, beets, craisins, carrots, peas, and whatever else we have on hand.


Monday - Combined FHE and dinner with the Searles. We're having kabobs (chicken, shrimp, beef, tomatoes, pineapple, onion, peppers, etc). For dessert I'm making a chocolate pudding pie:
Ingredients:
1 pkg. (3.9 oz.) Chocolate Instant Pudding
1-1/2 cups  cold milk
1 Graham Cracker Pie Crust
About 2 cups Cool Whip
Directions:
Beat pudding mix and milk with whisk 2 min.; spoon half into crust. 
Stir 1 cup Cool Whip into remaining pudding; spoon over pudding layer in crust. 
Top with remaining Cool Whip. Refrigerate 3 hours. 

Tuesday - Cheesy Chicken Spaghetti Casserole (This is a new recipe for me)

Wednesday - (I must be feeling adventurous because this is another new recipe) BBQ Pork Chops and Twice Baked Potato Casserole

Thursday - Lazy Night. AKA left overs or breakfast or grilled cheese.

Friday - Meatballs with Cream Sauce and Rice (Also a new recipe but EVERYTHING that I've friend from the Farm Girl's blog has been AMAZING)

Saturday - Left overs (EASY!!!)

Sunday (Father's Day) - Omelets for breakfast (Eggs, sausage, tomatoes, onions, peppers, etc). For Dinner Hamburgers on the grill (we love our grill!) and french fries. And I'll come up with something awesome for dessert.

This Week's Menu

I need to finish posting about Washington and then everything else that has been going on.
But I did A LOT of grocery shopping today and planned our meals for the week.
So I have food on the brain and I thought I'd share what we're eating...

Thanksgiving Post... Better Late Than Never!

We stayed here in Albuquerque for Thanksgiving.

We decided to celebrate with our friends the Hornbargers.

Lexi had a lot of fun in the kitchen helping me prepare the food.


Avery had a lot of fun sampling the food.

Seriously, I think it was the best turkey I have ever eaten.
Everything was just delicious.

As a joke, Sean shaved his face but left a mustache for Thanksgiving dinner.

Evelyn and Ian didn't get that it was a joke. They thought Sean was serious about it.

All day Sean couldn't bare to look at himself in the mirror.

It was pretty comical.

Well there you have it. My quickly done, long over due, Thanksgiving post.

Sean's Favorite Holiday

It would be a crime if I didn't blog about Sean's favorite holiday, next to Christmas that is.

We had a laid back 4th of July.

Sean studied. He's taking his first CPA test next Friday on the 15th.

So his life consists of lots and lots of studying after work right now.

We watched a couple episodes of Lost.

We are now getting around to watching it now that we have Netflix.

And of course we wore red, white and blue.

And we tried to teaching Lexi a little about America.




One of the highlights of the day was dinner.

Turkey burgers, onion rings and french fries.




And a patriotic fruit pizza for dessert. YUM!


At 9 we woke up Avery and headed to go watch some fireworks. Both of the girls loved it.

Valentines Day - The Food

These pictures upload backwards. Oh well. So first, we'll start with dessert. Sean's mom always made these cookies for her kids on Valentine's day. And I guess I'm continuing the tradition. This is the first year that I've made them because the last few years we have been spending Valentine's day/President's day weekend in Utah with Sean's sister Michelle and she has made cookies for all of us. For dinner I made pizza. I got this cute idea here.
Pay no attention to my nasty cookie sheets. Too many Totino's pizza's.

Lunch was just a heart shaped ham and cheese sandwich.

Breakfast was a pink pancake with sprinkles and syrup.

I'm already thinking of all the food I can turn green for St. Patrick's day!

Kind of an East Coast New Year's Eve

On New Year's Eve we went out to eat at Sadie's. A restaurant that I've been wanting to go to for a few weeks now. It's New Mexican style food, which basically means Mexican with the option of red or green Chiles. There was a live band playing, well really two guys. They came and sang to us at our table which was really fun. The lady at the table next to us wouldn't stop talking to us about our girls. She kept telling us who beautiful they are. We're used to this happening a lot :)

I ordered the small nacho appetizer for dinner. I wonder what the large looks like!
This is the after picture. I barely dented the food...
It was a great restaurant. And next time someone comes to visit us we're gonna take them there to get some good "New" Mexican food.

After dinner we went home and just let the kids play. They ended up going to bed just before 10pm Mountain Standard Time, which is nearly 12pm East Coast Time. So they almost had an East Coast New Years. We went to bed a little after 10. We kind of have a tradition in our family of going to bed before midnight.

Sunday: Penne Pasta with Cheesy Garlic Bread ... This is one of Sean favorite meals. We always wants me to make this bread.

Monday: Burrito's El Grande

Tuesday: Italian Chicken ... Gotta love easy Crop Pot meals!

Wednesday: Pasta with Broccoli and Sausage ... This is my first time trying this recipe but I got it from my favorite blog, Craftiness is not Optional, so I know it's gonna be good!

Thursday: Mexican Casserole

Friday: Baked Lasagna ... This is going to be my first time EVER making Lasagna but I'm sure that it will be good because I got the recipe from Sister's Stuff.

Saturday: Creamy Chicken and Pasta Bake ... My newest favorite recipe.

Josh and Big Jud's

Last Wednesday, Sean's older brother Josh came to visit us. It was just a quick visit but we had so much fun. We love it when Josh comes to see us! While he was here we went out to eat as a family to Big Jud's. It's an experience. If you haven't been, Sean and I would recommend it for sure. Their burgers are amazing and the atmosphere is fun.


The building is out in the middle of no where in Archer and it looks like a public bathroom at a state park...


But every time we've gone it's been full. So this time while we waited the guys bought themselves mustaches from a vending machine. They were hoping to get furry ones but got these ones instead. I think they just look like band aids. I also think that the next time all the Christensens are together, the guys should wear these...


Someone who would probably disagree with me is Lexi, she looked scared. She wanted nothing to do with her daddy or uncles when they were wearing the mustaches.


Sean convinced Josh to eat the Big Jud. Although, I'll admit it didn't take much convincing. This is a one pound patty!

Josh ate it without much of a struggle and with an incredible time...


He had the first half done within 5 minutes. He hardly slowed down at all. If our computer wasn't being so slow right now I would post a video. But I'm sure you can just imagine watching Josh (as he said it) bare bottom spank his hunger.


A fun group sitting next to us (who had traveled all the way from Canada for the experience) gave us all free ice cream. Which Josh was grateful for because he said he was feeling hot after eating all that food.


Sure Josh was full but I look even fuller at 37 1/2 weeks pregnant. Big Jud's was definitely worth the trip. The original Big Jud was even there that night, flipping burgers in the kitchen.




I had to include this picture. I bought a new Moby wrap on Craig's list last week and Josh tried it out for me. He said it was so comfortable and even Lexi seemed to enjoy it. Josh is trying to swaddle her like a newborn in this picture, Lexi preferred facing out though.


And here is a picture of "the Evens." Josh is Christensen kid #2, Sean is #4 and Andrea is #6.
